MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Greek Sheet-Pan Chicken

     Yield: 4 servings

     4    Skinned, bone-in chicken
          - thighs
   1/2 c  Greek vinaigrette
     8 sm Red potatoes; quartered
     1 md Red bell pepper; in 1/2"
          - strips
    14 oz Can water-packed artichoke
          - hearts; drained, halved
   3/4 c  Pitted ripe olives; drained
     1 sm Red onion; in 8 wedges
   1/4 ts Pepper
   1/3 c  Feta cheese; crumbled

 Set oven @ 375°F/190°C.

 Spray a 15x10x1" baking pan with cooking spray; set aside.

 In a large bowl, combine the first 7 ingredients; toss to coat.
 Place chicken and vegetables in a single layer on baking pan;
 sprinkle with pepper. Bake 30-35 minutes.

 If desired, preheat broiler. Broil chicken and vegetables 3 to 4"
 from heat until lightly browned, 2-3 minutes. Remove from oven,
 cool slightly. Sprinkle with feta cheese.
