           Fasolakia Yiyantes Sto Fourno (Oven Baked Beans)

  2      lb            Dried giant white beans
  2      c             Oil
  1                    Garlic head
  3      md            Onions -- chopped
  1      tb            Celery -- chopped
    1/2  c             Parsley -- minced
                       Salt & pepper -- to taste
  1      c             Water -- hot
  1 3/4  lb            Tomatoes -- peeled,
                       - strained -OR-
  1      tb            Tomato paste -- plus:
  1 1/2  c             Water
                       Additional water -- as needed

Wash the beans, place in water, and soak them overnight. Drain them,
then place in a pot of fresh cold salted water; cook for 45 minutes;
drain. Meanwhile, place oil, garlic, and onions in a baking pan and
bake in preheated 350°F oven until golden. Add beans, celery,
parsley, salt & pepper, and hot water. Bake 30 minutes longer. Remove
from oven, stir the beans, pour in tomatoes (or diluted tomato
paste). Return to oven and bake until only the oil remains.
