     Title: Thịt Heo Kho Tiêu (Braised Pork With Fish Sauce)

     Yield: 1 Batch

     1 lb Boneless pork leg (500 g);
          - sliced
     1 c  Water (250 ml)
          Ground white pepper

MMMMM--------------------------MARINADE-------------------------------
     4 tb Fish sauce
     1 tb Caramel syrup
     1 tb Crushed black peppercorn
     1    Finger-length red chili;
          - deseeded and halved
          - lengthwise
     1 tb Sugar

 Make the marinade first by combining all the ingredients in a bowl and
 mixing well. Place the pork slices in the marinade, mix until well
 coated and allow to marinate for at least 1 hour.

 Bring the marinated pork slices and a little of the marinade to a
 boil in a wok or skillet. Reduce the heat to low and simmer uncovered
 until the sauce almost dries up, 3 to 5 minutes. Add the water,
 increase the heat to medium and continue to simmer for 3 more
 minutes, until the pork is cooked. Remove and transfer to a serving
 bowl.

 Sprinkle the braised pork with pepper and serve hot with fresh
 vegetables and steamed rice.
