MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Chicken Ramen

MMMMM--------------------------CHICKEN-------------------------------
     2 tb Oil
     2    Chicken breast halves
          - (6 oz ea); boned, skinned
   1/4 ts Salt
   1/4 ts Pepper
     1 tb Soy sauce
     1 ts Brown sugar

MMMMM--------------------------NOODLES-------------------------------
     1 tb Oil
     2 ts Sesame oil
     1 c  Fresh shiitake mushrooms;
          - sliced
     3 cl Garlic; minced
     1 ts Fresh gingerroot; minced
     2 tb Mirin
     6 c  Chicken broth
     2 tb Soy sauce
     2 c  Bok choy; coarsely chopped
     9 oz Ramen noodles (3 pkg)

MMMMM--------------------------TOPPINGS-------------------------------
     4 lg Eggs; soft-cooked, peeled,
          - halved
     4    Green onions; thin sliced
     4 ts Sesame seeds

 Set oven @ 375°F/190°C.

 In a small oven-proof skillet, heat oil over medium
 heat. Sprinkle chicken with salt and pepper. Brown
 chicken, 2-3 minutes on each side.

 Combine soy sauce and brown sugar; brush over chicken.
 Transfer skillet to oven. Bake 15-20 minutes.

 Meanwhile, in a large saucepan, heat canola and sesame
 oils over medium heat.

 Add mushrooms; cook and stir until tender, 3-5 minutes.
 Add garlic and ginger; cook and stir 1 minute longer.
 Stir in broth, soy sauce and mirin; bring to a boil.

 Reduce heat; cover and simmer 10 minutes. Add bok choy.
 Cook, uncovered, for 5 minutes.

 Add noodles. Discard seasoning packets or save for
 another use.

 Cook, uncovered, until noodles are tender, 5-7 minutes.
 Cut chicken into slices.

 To serve, add noodles, mushrooms and bok choy from
 saucepan to 4 individual serving bowls. Ladle desired
 amount of broth over noodles. Add sliced chicken and
 toppings.
