Title: Vegetable Pulau

2 c Rice; washed; drained
2 Cinnamon sticks (1")
2 c Mixed vegetables; chopped
4 Black cardamom pods
6 Cloves
3 ts Salt
2 Bay leaves
1 ts Cashews; chopped
1 tb Raisins
1 Onion; chopped
1 ts Turmeric
2 tb Ghee
3 1/2 c Water
Heat ghee in a pressure cooker and sauté cashews and raisins; remove
from pan and set aside. Sauté onions, then remove from pan and set
aside. In the remaining ghee, add cinnamon, cardamom pods, cloves,
bay leaves, and cumin, and sauté for 2 minutes. Add turmeric and
chopped vegetables and cook another 3 minutes. Add the rice and cook
for another minute. Mix in water and salt. Place lid on pressure
cooker and cook for 1 minute before bringing to maximum pressure.
Allow to cool gradually before opening. Place pulau in a serving dish
and sprinkle with cashews, raisins, and onion.
