     Title: Capirotada (Bread Pudding)

     Yield: 1 Batch

     1    White bread loaf; toasted
     1 lb Longhorn Cheddar; shredded
     1 c  Raisins
     1 c  Pecans; chopped
     1 c  Dark brown sugar
     4 c  Cinnamon Tea

     8    Cinnamon Sticks
   1/2 c  Sugar
     6 c  Water; up to 8 c

 Cinnamon Tea:

 Place cinnamon sticks in 6 to 8 cups of water, add sugar, and bring
 to a full boil. Remove cinnamon sticks--strain for cinnamon tea.

 Capirotada:

 Soak raisins and chopped pecans in 3 cups of the cinnamon tea. In a
 casserole dish, layer toast, cheese, mixture of raisins and pecans,
 and brown sugar--in that order. Pour remaining cinnamon tea over
 casserole. Bread should be very moist. Bake at 350°F for about
      35    minutes.
