     Title: Nan-E Keshmeshi (Persian Raisin Cookies)

     Yield: 42 Cookies

     2 c  Raisins (298 g)
   1/2 c  Spiced rum or brewed black
          -tea (113 g)
     1 c  Unsalted butter (227 g);
          -softened
 1 3/4 c  Granulated sugar (347 g)
     2 lg Eggs
     1 ts Pure vanilla extract
     3 c  Unbleached allpPurpose
          -flour (360 g)
   1/2 ts Table salt
   3/4 ts Baking soda

 Preparation time: 21 minutes
 Bake time: 12 to 13 minutes
 Total time: 38 minutes

 Preheat the oven to 350°F. Lightly grease two baking sheets, or line
 them with parchment.

 Mix the raisins and rum (or tea) together in a medium bowl and cover
 tightly with plastic wrap.

 Microwave on high for 1 minute and then set aside to cool.
 Alternatively, heat the rum (or tea) in a medium saucepan over
 medium-low heat until it just begins to boil, about 1 minute, and
 then add the raisins, mix well, and remove from the heat. Set aside
 to cool.

 Combine the butter and sugar in the bowl of a stand mixer and mix on
 medium-high until fluffy, about 3 to 4 minutes.
