MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Baked Orange Soufflé

     Yield: 1 Souffle

   1/2 c  Milk
     1    Orange; zest of; grated
     2    Oranges; juice of
   1/2 c  Sugar
     1 c  Fine bread crumbs; without
          - crust
     2    Eggs; separated

MMMMM------------------------GOLDEN SAUCE-----------------------------
     3 tb Butter
   1/2 c  Powdered sugar
     1    Egg yolk; well beaten
     2 tb Orange juice
     2 tb Cream

 Soak bread crumbs in milk. Add orange juice and rind. To beaten egg
 yolks add sugar and combine with crumb mixture. Add stiffly beaten
 egg whites. Fill greased custard cups 2/3 full. Set in pan containing
 hot water. Bake until firm in moderate oven (350°F). Serve with
 Golden Sauce.

 Golden Sauce:

 Cream butter. Add powdered sugar and cream thoroughly. Add beaten egg
 yolk. Add, alternately, orange juice and cream. Set bowl over hot
 water and stir mixture until smooth. Cool and serve with baked orange
 soufflé, bread pudding, or plum pudding.
