1 1/2 c Old-fashioned rolled oats
1/4 c Brown sugar; packed
1/4 c Margarine; melted
1/4 c All-purpose flour; unbleached
1/4 ts Salt
3/4 c Sugar
1 ts Ground cinnamon
1 tb Corn starch
3 c Tart apples; unpeeled, chopped
2 c Cranberries; fresh or frozen,
-if using frozen, thaw
Preheat oven to 350°F; coat an 8" square baking pan with nonstick
cooking spray. Combine the oats, brown sugar, margarine, flour, and
salt in a small bowl. Stir well and set aside. Whisk together the
sugar, cinnamon, and corn starch. Add the apples and cranberries;
toss well. Place the mixture in the pan and sprinkle the oat
topping evenly over top. Bake for 35 to 45 minutes, or until the
fruit is hot and bubbly and the oats are nicely browned.
