1/4 cup shortening -- room temperature
3/4 cup sugar
1 egg -- separated
1 teaspoon vanilla
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1 1/2 cups sifted flour
1/2 cup milk
1 pint pitted sweet or sour cherries
1/2 cup sugar
Stir shortening till creamy; beat in sugar in sugar, egg yolk and
vanilla. Sift together dry ingredients; add alternately to first
mixture with milk. Fold in egg white, whipped stiff. Mix cherries
with additional 1/2 cup sugar; transfer to oiled shallow 8-inch
square pan. Pour over batter, spreading mixture higher at edges than
center. Bake 35 minutes in a moderate (375°) oven. Serve with or
without additional stewed cherries, cherry sauce or whipped cream
cheese.
