1 c Water -- cold
3 Egg yolks
1 tb Sugar
1/4 ts Salt
1 pkg Dry yeast
1 ts Lemon juice
4 c Flour -- sifted
1/2 lb Butter
3 Egg whites
3/4 c Jam -- your favorite
1/2 c Nuts -- chopped
2 tb Bread crumbs
Mix together first 6 ingredients. In another bowl, work together
4 cups of flour and 1/2 lb butter until crumbly. Add above mixture
and mix until the consistency of pie crust. (If too thin, add flour.
if too thick, add a little water.) Put in refrigerator while mixing
filling.
Beat 3 egg whites until stiff. Beat 1/2 to 3/4 cups of your favorite
jelly or jam. (Knowing my grandmother, this was rad raspberry jam!)
Gently fold in 1/2 cup chopped nuts and 2 tblsp bread crumbs
Roll out the dough (1/3 at a time) on a sugared board until about
1/8" to 1/4" thick. Cut into 2" to 3" squares. Put a little filling
at one end, roll up and put on ungreased pan, cut side down. Bake at
350°F until golden brown (about 20 minutes). Cool before removing.
When cool, decorate with 2 green leaves and a red rosette on top
centered along the length.
