Title: Shoofly Pie

Yield: 6 Servings
1 1/2 c Flour
1/2 c Dark brown sugar
1 ts Cinnamon
1/2 ts Nutmeg
1/3 ts Salt
1/4 lb Unsalted butter; cold
3/4 c Molasses
3/4 c Water; boiling
1/2 ts Baking soda
1 Single crust pie pastry;
- rolled flat, placed in a
- 9" pie plate
Set oven @ 450°F/232°C.
Crumb Topping:
Mix flour, sugar, cinnamon, nutmeg, and salt together in a bowl.
Cut in the butter with a pastry cutter until the consistency
resembles corn meal.
Combine molasses, water, and baking soda and pour into pastry
shell. Spoon the crumb mixture evenly over the top. Bake
15 minutes, lower the heat to 350°F and bake 20 minutes longer, or
until set and firm.
