     Title: Coconut Chess Pie

     Yield: 1 Servings

     4    Eggs; beaten
 1-1/2 c  Sugar
   1/2 c  Butter; melted
     1 tb Vinegar
     1 ts Vanilla
   1/2 ts Salt
     1 c  Coconut; flaked
     1    Pie shell, 9", partially
          -baked
          Toasted flaked coconut (OPT)

 Combine first 6 ingredients.  Beat well.  Stir in 1
 cup coconut; pour into partially baked pie shell. Bake
 at 325° for 45 to 50 minutes or until set. Cool on
 wire rack. Garnish with toasted coconut.
