1 c Sugar
1/4 ts Salt
1/2 ts Ground cinnamon
1/4 c Corn starch
1/3 c Cocoa
1/4 c Milk -- cold
2 c Milk -- scalded
3 tb Butter
3 Egg yolks
1 ts Vanilla
Baked pastry shell (9")
Meringue:
3 Egg whites
1/8 ts Salt
4 tb Sugar
Preheat the oven to 300°F. Combine 1/2 cup of the sugar with the
salt, cinnamon, corn starch, and cocoa in the top of a double boiler.
Blend in the cold milk. Stir in the hot milk and cook over hot water
until thick, about 3 to 5 minutes, stirring constantly. Cover and
continue cooking until very thick, about 8 minutes, stirring
occasionally. Add the butter. Beat the egg yolks lightly and blend
them with the remaining 1/2 cup sugar. Add a little of the hot
mixture, then stir into the remianing hot mixture. Cook, uncovered,
over hot (not boiling) water until very thick, about 10 minutes. Add
the vanilla. Cool. Turn the mixture into the baked pie shell. Top
with meringue and bake 20 minutes.
Meringue:
Combine 3 egg whites with 1/8 ts salt and beat until the whites stand
in soft peaks. Beat in 4 tb sugar, 1 tb at a time, until stiff.
