MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Red Velvet Thumbprint Cookies

     Yield: 24 servings

     1 c  Unsalted butter; softened
   1/2 c  Sugar
     1 lg Egg yolk; room temperature
     1 ts Vanilla extract
   1/2 ts Red paste food coloring
     2 c  A-P flour
     2 tb Baking cocoa
   1/2 c  Coarse sugar

     4 oz Cream cheese; softened
   1/4 c  Sugar
     1 lg Egg white; room temperature
   1/2 ts Vanilla extract
   1/4 ts Kosher salt

 Set oven @ 300°F/150°C.

 In a large bowl, cream butter and sugar until light and fluffy,
 5-7 minutes. Beat in egg yolk, vanilla and food coloring. In
 another bowl, whisk flour and cocoa; gradually beat into creamed
 mixture. Shape into 1 balls; roll in coarse sugar. Place 2" apart
 on parchment-lined baking sheets. Press a deep indentation in
 center of each with the back of a 1/2 ts measuring spoon.

 Bake 10 minutes. Meanwhile, for filling, beat cream cheese, sugar,
 egg white, vanilla, and salt until blended. Reshape indentations in
 parbaked cookies as needed. Add 1 ts filling to each cookie. Bake
 until filling is set, 10-12 minutes longer. Remove to wire racks to
 cool completely.
