MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Aperol Spritz Cookies

     Yield: 36 Cookies

   1/2 c  Unsalted butter; softened
   3/4 c  Confectioners' sugar
   1/4 ts Salt
     1 lg Egg; room temperature
   1/2 ts Orange extract
     1 ts Orange zest; grated
 1 3/4 c  A-P flour

MMMMM---------------------------GLAZE--------------------------------
     2 c  Confectioners' sugar
   1/4 c  Aperol
     1 tb Orange zest; grated
          Sprinkles (optional)

 Set oven @ 375°F/190°C.

 In a large bowl, cream butter, confectioners' sugar and
 salt until light and fluffy, 3-4 minutes. Beat in egg,
 orange extract and orange zest until smooth, 1-2
 minutes. Beat in flour until incorporated.

 Using a cookie press fitted with a shaped disc, form
 cookies. Place on ungreased baking sheets 2 in. apart.
 Bake 7-8 minutes or until just set. Let cool on baking
 sheet for 5 minutes before removing to wire racks to
 cool completely.

 In a small bowl, whisk together confectioners' sugar, Aperol, and
 orange zest. Dip the top of each cooled cookie into the glaze. Top
 with sprinkles, if desired. Let sit 10 minutes or until glaze is
 set.
