     Title: Rocky Road Cookies

     Yield: 4 servings

     2 c  Butter
     1 c  Sugar
     1 tb Baking powder
     1 ts Salt
   1/2 c  Shortening; softened
     2    Unsweetened chocolate
          -squares
          - melted
     2    Eggs
   1/2 c  Milk
     1 ts Rum extract
   1/2 c  Nuts; chopped

          Chocolate frosting:
     1    Unsweetened chocolate
   1/3 c  Milk
     2 c  Powdered sugar
     1 c  Miniature marshmallows

    Combine flour, sugar, baking powder, and slat in mixing bowl. Add
 shortening, chocolate, eggs, milk and rum extract. Mix until blended and
 smooth, stir in nuts. Drop by teaspoonfuls onto greased cookie sheets. Bake
 at 350°F for 15-20 min. Cool. Frost.

    CHOCOLATE MARSHMALLOW FROSTING: Melt chocolate in milk in top of double
 boiler over simmering water, stir until smooth. Remove from heat and beat
 in sugar, 1/2 cup at a time, mixing well after each addition. Cool
 slightly, fold in marshmallows. Frost cookies.
