     Title: Oatmeal-egg Poufs w/Amaretto Glaze

MMMMM---------------------OATMEAL-EGG POUFS--------------------------
     6 lg Eggs
     1 c  Granulated pure cane sugar
     2 c  Whole milk
     1 tb Pure almond extract
     4 tb Unsalted butter; melted
     2 c  Old-fashioned oatmeal
   1/4 c  Sultana raisins
          Pam spray
          Fresh strawberries; sliced,
          - garnish
          Well-toasted almond slices;
          - garnish

MMMMM-----------------------AMARETTO GLAZE----------------------------
     1 lg Egg
     1 c  Confectioners' powdered
          - sugar
   1/2 c  Skimmed evaporated milk;
          - undiluted
     2 tb Unsalted butter; melted
   1/2 c  Amaretto liqueur

 A healthy gourmet egg recipe that also presents very
 attractively.

 Set oven @ 350°F.

 FOR POUFS: Whisk eggs adding sugar, milk, almond extract and
 butter until well mixed. Stir in oats and sultanas. Spray
 Pam on bottom of 6 large non-stick muffin tins. Pour mixture
 into tins until almost full. Bake at 350°F for 30 minutes or
 until lightly browned on top.

 FOR AMARETTO GLAZE: Whisk egg, sugar, milk and butter in
 saucepan. Bring to boil, stirring constantly. Cook about 3
 minutes or until thickened. Remove from heat and stir in
 Amaretto. For each serving, place a tablespoon of the
 Amaretto glaze onto the plate and place an inverted pouf on
 the glaze. Spoon another tablespoon on top. Garnish with
 slices of strawberries arranged diagonally sticking up.
 Sprinkle the toasted almonds across the top.

 NOTE: Serves 6 and can be doubled to serve 12
