Lemon Bars

 Amount  Measure       Ingredient -- Preparation Method

  1      Cup           Flour
    1/4  Cup           Powdered Sugar
    1/2  Cup           Butter
                       -----Filling-----
  1                    Egg -- beaten
  1      Cup           Sugar
                       Juice Of One Lemon
                       Grated Rind (Dark Yellow) Of One Lemon
    1/4  Cup           Flour
    1/2  Tsp           Baking Powder

Crust:

Mix like pie crust, pat into 8x8" pan.
Bake 15 minutes at 350°.

Filling:

Pour on baked crust and bake 20 minutes at 350.
Sprinkle top with powdered sugar.

If you are really fond of lemon (I am), you can double the lemon juice
and add extra flour to compensate.
