Title: Chocolate Oat Squares

1 c Butter; +2 tb, softened,
- divided
2 c Brown sugar; packed
2 lg Eggs; room temperature
4 ts Vanilla extract; divided
3 c Quick-cooking oats
2 1/2 c A-P flour
1 1/2 ts Salt; divided
1 ts Baking soda
14 oz Can sweetened condensed
- milk
2 c Semisweet chocolate chips
1 c Walnuts; chopped
Set oven @ 350°F/175°C.
In a bowl, beat 1 cup butter and brown sugar until light and
fluffy, 5-7 minutes. Beat in eggs and 2 ts vanilla. Combine oats,
flour, 1 ts salt and baking soda; gradually add to creamed mixture
and mix well. Press two-thirds of oat mixture into a greased
15x10x1" baking pan.
In a large saucepan, combine milk, chocolate chips, and remaining
2 tb butter and 1/2 ts salt. Cook and stir over low heat until
chocolate is melted. Remove from heat; stir in walnuts and
remaining 2 ts vanilla. Spread over crust. Sprinkle with remaining
oat mixture.
Bake until golden brown, 20-25 minutes. Cool on a wire rack. Cut
into squares.
