6 tb Butter; softened
2 tb Oil
1/2 c Brown sugar; packed
1/2 c Sugar
1/2 ts Salt
1/2 ts Cinnamon
1/4 ts Baking soda
1/2 ts Baking powder
3/4 c Oats
1/2 pk Caramel baking bits (11 oz)
1/2 c Pecans; chopped
1 pn Coarse sea salt (optional)
8 Pecan halves (optional)
Preheat oven to 350°F. Line 8x8" pan with parchment, leaving
overhang on sides. Spray pan and paper lightly with cooking
spray.
In a bowl beat butter and oil on medium high speed for 30 seconds.
Add both sugars, salt, baking bowder, baking powder, cinnamon, and
mix thoroughly stopping occasionally to scrape the sides of the
bowl. Beat in the egg and vanilla. Gently mix in flour. Pour in
oats, caramel bits, and chopped pecans and stir with a spoon to
combine.
Spread batter in pan and evenly smooth top. Place pecan halves on
top (if using) and sprinkle with coarse seat salt (optioanal).
Bake 25 to 30 minutes or until top is evenly browned. Allow to cool
completely.
Remove from pan by lifting edged of parchment and cut into squares.
Did not use paper, just sprayed 8x8" pan. Covered uncut bars for
storage.
