Filling:
1 c Sugar
2 Eggs
2 tb All-purpose flour
1/2 ts Nutmeg
4 c Fresh peaches -- up to 6 c -OR-
32 oz Frozen sliced peaches (2 pkg)
Cobbler:
1 1/2 c All-purpose flour
2 tb Sugar
1 ts Baking powder
1/2 ts Salt
1/3 c Butter -- softened
1 Egg -- slightly beaten
3 tb Milk
3 tb Sugar
Preparation time: 1 hour
Heat oven to 400°F. Peel and slice peaches. In large bowl stir
together all filling ingredients except peaches. Stir in peaches.
Pour into 13x9" pan. In medium bowl stir together all cobbler
ingredients except butter, egg, and milk. Cut in butter until
crumbly. Stir in egg and milk just until moistened. Crumble mixture
over peaches; sprinkle with 3 tb sugar. Bake for 40 to 45 minutes or
until golden brown and bubbly around edges. Serve with whipped cream
or vanilla ice cream.
