1 c Sugar
3 tb Corn starch
1/2 ts Cinnamon
2 tb Butter
6 lg Peaches -- sliced
Topping:
1 c Flour
1/3 c Shortening
2 tb Sugar
1 1/2 ts Baking powder
1/2 ts Salt
1/4 c Milk
1 Egg -- slightly beaten
1 tb Sugar
Combine sugar, corn starch, and cinnamon and sprinkle over fruit,
tossing to mix. Melt 2 tb butter in an 8x8" baking dish and add
fruit. In a bowl, place flour, sugar baking powder, and salt. Toss
to mix, then cut in shortening with a pastry blender until crumbly.
Combine egg with milk and stir into dry ingredients. Drop batter by
spoonfuls onto fruit. Sprinkle batter with the 1 tb of sugar. Bake
at 375°F for 25 to 30 minutes or until topping is golden brown and
crusty.
