     Title: Iva's Peach Cobbler

     Yield: 12 servings

     8 lg Ripe peaches; peeled, pitted
          - sliced
 2 1/2 tb Corn starch
   3/4 c  Sugar; up to 1 c

MMMMM---------------------------CRUST--------------------------------
     1 c  A-P flour
     1 c  Sugar
     1 ts Baking powder
     2 lg Egg yolks; room temperature
   1/4 c  Butter; melted
     2 lg Egg whites; room temperature,
          - stiffly beaten
          Vanilla ice cream (optional)

 Set oven @ 375°F/190°C.

 Combine peaches, cornstarch and sugar; place in a
 greased 13x9" baking dish. For crust, in a bowl,
 whisk together flour, sugar and baking powder. Stir in
 egg yolks and butter. Gently fold in egg whites. Spread
 over peaches. Bake until the fruit is bubbling around
 edges and top is golden, about 45 minutes. If desired,
 serve with ice cream.
