18 1/4 oz Pkg devil's food cake mix
- without pudding included
4 oz Pkg instant chocolate or
- chocolate fudge pudding
- & pie filling mix
4 Eggs
1/4 c Vegetable oil
3 c Zucchini (3 md); shredded
1 ts Cinnamon
1 ts Orange zest; grated
1/2 c Flaked or shredded coconut
1/2 c Walnuts; chopped
Powdered sugar
Preheat oven to 350°F. In a large bowl, beat cake mix, pudding mix,
eggs, oil, zucchini, cinnamon, and orange zest with an electric
mixer on medium speed, 3 to 4 minutes, until fluffy and thoroughly
blended. Stir in coconut and walnuts. Turn into a greased and
floured 9x13" baking pan. Bake 40-45 minutes, or until a cake
tester inserted in center comes out clean. Let cake cool in pan.
Sprinkle powdered sugar over top before serving.
