MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Banana Skillet Upside-Down Cake

     Yield: 10 Servings

    14 oz Box banana quick bread &
          - muffin mix
   1/2 c  Walnuts; chopped
   1/4 c  Butter; in cubes
   3/4 c  Brown sugar; packed
     2 tb Lemon juice
     4 md Bananas; in 1/4" slices
     2 c  Sweetened shredded coconut

 Set oven @ 375°F/190°C.

 Prepare banana bread batter according to package

 directions; stir in walnuts.

 In a 10" ovenproof skillet, melt butter over medium heat; stir in
 brown sugar until dissolved. Add lemon juice; cook and stir until
 slightly thickened, 2 to 3 minutes longer. Remove from heat.
 Arrange bananas in a single layer over brown sugar mixture;
 sprinkle with coconut.

 Spoon prepared batter over coconut. Bake until dark golden and a
 toothpick inserted in center comes out clean, 35 to 40 minutes.
 Cool 5 minutes before inverting onto a serving plate. Serve warm.
