                            Red Velvet Cake

    1/2  c             Shortening
  1 1/2  c             Sugar
    1/2  c             Egg Beaters® 99% egg substitute
  2      tb            Cocoa
  2      oz            Bottle red food coloring
  2 1/2  c             Flour
  1      ts            Salt
  1      c             Buttermilk
  1      tb            Vinegar
  1      ts            Baking soda
  1      ts            Vanilla

Mix together shortening, eggs, & sugar. Make a paste of the cocoa and
part of food coloring. Add this and rest of coloring to creamed
mixture.

Sift flour and salt alternately into batter with buttermilk. Add
vinegar. Stir in soda and vanilla.

Mix and bake at 350°F for 30 minutes, or until done by touch.
