                     Basic Apple Brunch Cake

  4      c             Apples -- diced
  2                    Eggs
    1/2  c             Vegetable oil
  1      c             Brown sugar
  1      c             White sugar -- or less
  2      ts            Cinnamon
  2      c             All-purpose flour
  1      ts            Salt
  1      ts            Baking soda

Break eggs over apples and stir. Mix in oil and sugars. In a separate
bowl, mix cinnamon, flour, salt, and baking soda. Add dry mixture to
wet mixture. Stir it all up and bake at 325 to 350°F in a buttered
glass baking dish for 45 minutes.
