1 1/2 c Cooking oil
4 Eggs; separated
3 ts Baking powder
1 ts Cinnamon
1 1/2 c Raw sweet potatoes; grated
2 c Sugar
2 1/2 c Cake flour; sifted
1/4 ts Salt
1 ts Nutmeg
1 c Walnuts or pecans; chopped
1 ts Vanilla

1 lg Can evaporated milk
3 Egg yolks
1 1/3 c Flaked coconut
1 c Sugar
1/2 c Butter
1 ts Vanilla
Cake:
Combine cooking oil and sugar. Beat until smooth. Add egg yolks and
beat well. Add dry ingredients which have been sifted together. Stir
in potatoes, nuts and vanilla, beat well. Beat egg whites until
stiff. Fold into mixture. Bake in 3 greased and floured 8" layer pans
at 350°F for 25-30 minutes. Cool and frost.
Frosting:
Combine milk, sugar, butter, egg yolks, and vanilla in sauce pan. Heat
until boiling. Add coconut and continue to cook 3 to 5 minutes or
until mixture thickens. Remove from heat, and place saucepan in
container of ice and beat with wooden spoon until spreading
consistency.
