1 1/4 c All-purpose flour
1 c Whole wheat flour
1 c Granulated sugar
3/4 c Brown sugar -- packed
1 tb Ground cinnamon
2 ts Baking powder
1 ts Salt
1/2 ts Baking soda
3/4 c Cooking oil
1 ts Vanilla
3 Eggs
2 md Apples (2 c) --
- peeled, finely chopped
1 c Walnuts -- chopped
Powdered sugar glaze or
- whipped cream
Powdered Sugar Glaze:
1/2 c Powered sugar -- sifted
1/4 ts Vanilla
1 ts Milk -- up to 2 ts
Generously grease and flour a 10" fluted tube pan; set aside. In a
large mixing bowl combine the flours, granulated and brown sugars,
cinnamon, baking powder, salt, and baking soda. Add oil, vanilla, and
the eggs; beat until well mixed. Stir in chopped apples and walnuts.
Spoon batter evenly into prepared pan. Bake in a 350°F oven for 45 to
50 minutes or until cake tests done. Cool in pan 15 minutes; invert
cake onto a wire rack. Cool thoroughly. Drizzle top with Powdered
Sugar Glaze or dollop servings with sweetened whipped cream.
Yield: 16 Servings
Powdered Sugar Glaze:
In a small mixing bowl stir powered sugar, vanilla, and enough milk
to make of drizzling consistency. Drizzle over cooled cake.
