                              Carrot Cake

  2      c             All-purpose flour
  2      c             Sugar
  2      ts            Ground cinnamon
  1      ts            Baking soda
    1/2  ts            Salt
  3                    Eggs
  2      c             Carrots -- finely grated
  1 1/2  c             Vegetable oil
  1      ts            Vanilla extract
  1      c             Crushed pineapple -- drained
  1      c             Coconut -- shredded
  1      c             Nuts -- chopped, divided
                       Cream Cheese Frosting:
  6      oz            Cream cheese -- softened
  3      c             Confectioners' sugar
  6      tb            Butter -- softened
  1      ts            Vanilla extract

"You'll love the texture this pretty, moist cake gets from pineapple,
coconut, and, of course, carrots! Its traditional cream cheese
frosting adds just the right touch of sweetness," says Debbie Jones
of California, Maryland.

In a mixing bowl, combine dry ingredients. Add eggs, carrots, oil,
and vanilla; beat until combined. Stir in pineapple, coconut, and
1/2 cup nuts.

Pour into a greased 13x9x2" baking pan. Bake at 350°F for 50 to
60 minutes or until cake tests done. Cool. Combine frosting
ingredients in a small bowl; mix until well blended. Frost cooled
cake. Sprinkle with remaining nuts. Store in refrigerator.
