Cake: Mix flour, baking powder, baking soda, salt, cinnamon, sugar. Add
eggs, oil, carrot, pineapple/with juice from can, nuts. Pour into well
greased oblong baking pan. Bake 40-45 min at 350°F.
Frosting: Mix softened cream cheese, softened butter and powdered sugar
until smooth. Add a little milk if desired. Spread frosting on top of cooled
cake.
I got this wonderful recipe from a co-worker of mine. You can cut the fat
content by substituting equal amounts of applesauce for all or part of the
oil.
