1 md Potato; peel & slice
1 ts Sugar
1 ts Salt
2 tb Corn meal
2 c Water; boiling
1/2 ts Baking soda
2 1/2 c Flour (approximate)
2 c Water; hot
2 tb Sugar
1 tb Salt
1/3 c Lard
9 c Flour (approximate)
Peel and slice potato. Add 1 ts sugar, 1 ts salt, and 2 tb corn
meal. Pour over 2 c boiling water, stirring well, let stand over
night in a warm place until light.
Drain off liquid, add 1/2 ts baking soda and enough flour to make a
stiff batter (about 2-1/2 c). Let stand in a warm place until
light.
Take 2 c hot water, 2 tb sugar, 1 tb salt, 1/3 c lard. Mix this
into flour (using about 9 c) then add light batter and mix into
medium stiff dough, kneading well.
Make into loaves, place in well greased pans. Bake in moderately
hot oven about 25 minutes.
Note: Moderate oven is 350 to 400°F.
