MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Carrot Banana Bread
Categories: Breads, Fruits, Vegetables.
     Yield: 16 Servings

     2 c  A-P flour
     1 c  Sugar
     1 ts Baking soda
   1/2 ts Salt
   1/2 ts Ground cinnamon
     2 lg Eggs; room temperature
     1 c  Ripe bananas; mashed
   1/3 c  Oil
     1 c  Carrots; grated
   1/2 c  Pecans; chopped

 Set oven @ 350°F/175°C.

 In a large bowl, combine flour, sugar, baking soda, salt, and
 cinnamon. In a small bowl, whisk eggs, bananas, and oil. Stir into
 dry ingredients just until moistened. Fold in carrots and pecans.
 Transfer to a greased 9x5" loaf pan.

 Bake until a toothpick inserted in the center comes out clean, 55
 to 65 minutes. Cool for 10 minutes before removing from pan to a
 wire rack to cool completely.
