MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Buttermilk Banana Bread

     Yield: 1 Loaf

 1 1/3 c  Sll purpose flour
     1 ts Baking soda
   1/2 ts Salt
   1/2 c  Unsalted butter; soft
     1 c  Granulated sugar; or less by
          -taste
     2 lg Egg
     1 ts Pure vanilla extract; not
          -artificial
   1/2 ts Orange extract
   1/2 ts Banana extract
     1    Orange; grated zest of
     4 lg Very ripe bananas; up to 5;
          -mashed
   1/4 c  Buttermilk
     1 c  Walnuts; chopped
     1 c  Raisins
     1 c  Chocolate chips (optional)

 Combine flour, soda, and salt. set aside.

 In a large mixing bowl, combine butter, sugar, eggs, extracts, and
 orange peel. Mix well, about a minute with electric beater, 2 to 3
 minutes if beaten with wooden spon. Stir in bananas and buttermilk.
 Add flour mixture and mix just until well combined. Add the nuts,
 raisins, and chocolate chips.

 Fill two prepared, greased 6x3x2" (15x8x5 cm) loaf pans. They will be
 a little more than half full. Bake in preheated 350°F (180°C) oven
 for about 1 hour. Test for doneness with wooden toothpick or by
 touch. When done, the toothpick, when inserted in the middle of the
 loaf should come out dry and the bread, when lighly pressed, should
 spring back.
