                     SPICY TOFU-BELL PEPPER SUPREME

  2       tb           Olive oil, extra virgin OR
  2       tb           Vegetable stock
  1 1/2   c            Bell peppers, mixed green
                       -and red -- diced
    3/4   c            Onions, yellow -- cubed
  1 1/4   c            Salsa, tomato mild
    1/2   c            Olives, black -- pitted
  1 1/2   c            Garbanzo beans, canned
                       -drained
  1       c            Tofu -- baked, cubed
    1/8   ts           Salt
    1/8   ts           Pepper

  Combine the oil, peppers, and onion in a saucepan and
 cook over high heat for 5 to 8 minuts. Reduce the heat
 and add the remaining ingredients. Cook over medium
 heat for 10 minutes. Serve with Fresh Corn Salad or
 brown rice.
