MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Tofu Tots

     Yield: 1 Batch

    28 oz Tofu (2 cakes); up to 16 oz

MMMMM--------------------------MARINADE-------------------------------
     5 tb White; or aquafaba
     3 tb Soy sauce
     3 tb Rice wine
     3 tb Vodka (80-proof)
   3/8 ts Baking soda
 4 1/2 tb Corn starch

MMMMM---------------------MARINADE ADDITIONS--------------------------
   1/2 c  Flour
   1/2 c  Corn starch
   1/2 ts Baking powder
   1/2 ts Kosher salt

 Press tofu for a while between two clean towels. While the tofu is
 oozing into the towels, make a marinade.

 Whisk the egg white, then add the rest and whisk a little more.

 Cube the tofu into 3/4" pieces. Toss with about 2/3rds of the marinade
 until evenly coated, then cover the cubes with something so it
 doesn't dry out while it sits.

 To the rest of the marinade add 1/2 c flour, 1/2 c corn starch, 1/2 ts
 baking powder, and 1/2 ts Kosher salt.

 Work it all together with a fork until you have a nice crumbly even
 mixture. This is your coating!

 Heat about 1/2 to 1" of neutral oil in a tall-sided dutch oven over
 medium-high heat until... you know, hot. But not too hot.

 Toss a bunch of pieces at a time in the crumbly mixture and place them
 carefully in the hot oil. Stir and fry gently until golden brown and
 crispy. Remove to a bowl and fry the next batch.

 After that, well, you do what you like. Salt 'em like fries. Pour on a
 spicy sweet/sour General Tso's glaze, or any other sauce you like.
