Louisiana Tofu Citron

1 lb Tofu (4 cakes)
1/2 c Whole wheat flour
3 tb Unsalted butter
3 tb Olive oil
4 cl Garlic -- crushed
1 md Onion -- diced
1/2 c Grapefruit juice -- *
2 tb Lemon rind
1/4 ts Cayenne
1/2 ts Honey
1/2 ts Salt
1 md Green (or red) bell pepper -- diced
1 1/2 c Fresh mushrooms -- sliced
* Original recipe called for 1/4 cup grapefruit juice. I needed at
least twice that amount.
Cut the tofu into 1" squares.
[I made block about 1x1x1/2", then cut across the square side on the
diagonal to make triangles.]
Place the flour on a flat plate [or casserole].
Dredge the tofu squares in the flour so that each square is fully
covered.
Melt the butter and oil in a skillet and lightly saute the onion and
garlic for 5 minutes.
Add the floured tofu squares and continue to saute over medium heat
until the tofu is brown on all sides (12 to 15 minutes).
Add grapefruit juice, lemon rind, cayenne, honey, and salt; mix well.
Cover and let cook over low to medium heat for 10 minutes.
After 10 minutes, add the bell pepper and mushrooms. Simmer, covered,
another 10 minutes.
[To save time, I condensed these last two steps into one 10 minute,
covered simmer. It worked fine.]
