                         Vegetarian Supper Dish

  1      c             Uncooked regular rice
  1      md            Onion -- chopped
  2      cl            Garlic -- minced
  2      tb            Oil
  1      md            Zucchini -- coarsely chopped
  1      md            Green pepper -- chopped
    1/2  ts            Oregano leaves
    1/8  ts            Pepper
  2      md            Tomatoes -- peeled, coarsely
                       - chopped
 16      oz            Can kidney beans -- drained
    1/4  ts            Salt (optional)
    1/2  c             Cheddar cheese -- shredded

Cook rice as directed on package, omitting or reducing salt to
1/2 ts. In large skillet, saute onion and garlic in oil until onion
is tender. Add zucchini, green pepper, oregano, and pepper; cook
vegetables until crisp-tender, about 5 minutes. Add tomatoes and
beans; cover and heat thoroughly. Add salt, if desired. Spoon hot
rice onto serving platter. Spoon vegetable mixture over rice;
sprinkle with cheese.

Yield: 7 Servings
