MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Vegan Jambalaya

     Yield: 6 Servings

     1 tb Oil
     1 md Bell pepper; chopped
     1 md Onion; chopped
     1    Celery rib; chopped
     3 cl Garlic; minced
     2 c  Water
14 1/2 oz Can diced tomatoes;
          - undrained
     8 oz Can tomato sauce
   1/2 ts Italian seasoning
   1/4 ts Salt
   1/4 ts Crushed red pepper flakes
   1/8 ts Fennel seed; crushed
     1 c  Uncooked long grain rice
    16 oz Can butter beans; rinsed,
          - drained
    16 oz Can red beans; rinsed,
          - drained

 In a Dutch oven, heat oil over medium-high heat. Add the green
 pepper, onion, and celery; cook and stir until tender. Add garlic;
 cook 1 minute longer.

 Add the water, tomatoes, tomato sauce, and seasonings. Bring to a
 boil; stir in rice. Reduce heat; cover and simmer for 15 to
 18 minutes or until liquid is absorbed and rice is tender. Stir in
 beans; heat through.
