MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Vegetarian Shish-Kebab

     Yield: 6 Servings

MMMMM--------------------------MARINADE-------------------------------
 1 1/4 c  Oil
 1 1/4    Vinegar
     2 tb Red wine
     2 cl Garlic; crushed
          Basil
          Oregano
          Salt
          Pepper

MMMMM------------------------SHISH-KEBABS-----------------------------
     1 sm Eggplant; cut in 1/2" chunks
     6 md Tomatoes; quartered
    24    Mushrooms
     2 md Apples
     2 md Onions; in 1" chunks
          Parmesan cheese; to sprinkle
          -on top; (optional)

 Skewered, pre-marinated vegetable chunks, broiled or barbecued. Serve
 them on a bed of rice, sprinkled with parmesan cheese.

 Plan on two skewers per person. Plan also on giving your eggplant and
 mushrooms at least 3 hours to marinate.

 Combine marinade ingredients.

 Clean the mushrooms and marinate them whole. Broil the eggplant chunks
 until soft (but not mushy) and add them, still hot, to the marinade.
 Stir and let stand at least 3 hours.

 Cut the peppers in wide strips. Skewer the vegetables in a subtle and
 provocative sequence, and baste them with extra marinade as they
 barbecue, roast, or broil.

 Serve them to your delighted guests, and mention that the skewers
 might be hot. A good red wine is appropriate with this meal.
