*1 -- 19 oz can Garbanzo Beans or Chick Peas or cook you own, make
sure that canned are well drained to get the salt rinsed off
*2 -- from 7-1/4 oz jar
*3 -- English cucumbers are excellent
In food processor bowl with metal blade, combine chickpeas, lemon
juice, oil, and garlic; process 1 or 2 minutes or until smooth. Add
roasted peppers; process 30 - 60 seconds or until peppers are finely
chopped.
To assemble sandwiches, place lettuce leaf and cucumber slices in
each pita bread half. Spoon with 3 tb hummus in each.
Kitchen Tip: If you do not have a food processor or a blender, mash
the chickpeas with a fork. The mixture may be slightly lumpy, but the
texture does not interfere with flavour.
