                           Crisp Red Cabbage

  4      c             Red cabbage -- shredded
  2                    Apples -- cored, cut into wedges
    1/4  c             Red wine vinegar
  2      tb            Brown sugar
    1/4  ts            Salt
    1/4  ts            Nutmeg

Place cabbage, apples, vinegar, and brown sugar in saucepan over
medium heat. Mix well. Cover and simmer about 10 minutes until
cabbage is tender-crisp. Add salt and nutmeg. Mix well. Serve warm.

Yield: 6 Servings

Exchanges: 2-3 Starch; 1-3 Meat; 1-3 Vegetable; 1 Fruit; 1-2 Fat
