2 lb Ground round
1 lb Italian sausage -- ground
2 c Shallot -- minced
2 tb Garlic -- minced
4 c Low sodium beef broth
1 ts Saffron threads
3 tb Olive oil
12 oz Diced green chiles
1 ts Oregano
1 ts Cumin
1/2 ts Cayenne
2 tb Hot chile powder
6 oz Tomato paste
32 oz Can kidney beans -- drained
4 c Onion -- minced
Combine beef, sausage, and garlic in a large stockpot. Saute for
10-15 minutes, until browned. Add remaining ingredients, except
beans. Simmer for 60 minutes. Add kidney beans and simmer for another
30-60 minutes. Serve hot, garnished as desired.
