1 lg Onion -- chopped
3 cl Garlic -- minced
2 tb Olive oil -- or to taste
1 c Cooked chicken -- cubed
8 oz Chopped green chiles (2 cans)
2 tb Cumin
2 ts Oregano
1/8 ts Chili powder
1 ds Tabasco sauce
1 ds White pepper
2 c Chicken broth
2 cans White hominy -- canned, drained
1 can White hominy -- canned, mashed
1 can White beans -- drained
1 can Blackeyed peas -- drained
3 tb Cilantro
Monterey jack cheese -- grated
In large pot, saute onions and garlic in olive oil until translucent.
Add poultry, chilis, and seasonings, except fresh cilantro. Mix well.
Add chicken broth, mashed hominy, drained hominy, and other beans and
stir. Simmer for about 1 hour stirring occasionally.
Add cilantro (or substitute parsley), simmer for 5 minutes. Adjust
seasonings to taste.
Serve with grated cheese as a garnish.
Notes: Turkey can be used in place of all or some of the chicken. If
you don't have cooked chicken you can cook in step one with onions.
Good strong homemade chicken broth makes a wonderful difference.
