96 oz Can tomato puree
96 oz Can crushed tomatoes
6 lb Ground round
2 c Onion -- minced
1 c Hot chile powder
1/4 c Dried oregano
96 oz Can kidney beans -- drained
2 ts Kosher salt -- to taste
2 tb Pepper -- to taste
2 c Cheddar cheese -- grated
8 oz Sour cream
4 c Sweet onion -- minced
Combine beef and onions in a stockpot, over a moderate flame. Heat
and stir for 15-20 minutes, until browned. Stir in remaining
ingredients. Bring to a boil, reduce heat, and simmer for 2 hours.
Serve hot, garnished with grated cheddar cheese, sour cream, and
minced sweet onions.
