                              Summer Chili

    1/2  c             Onions -- chopped
  1 1/2  cl            Garlic -- minced
    1/2  ts            Olive oil
 10 1/2  oz            Chicken broth
  1      c             Dark red kidney beans -- drained
                       - and washed
    1/4  c             Celery -- chopped
    1/4  c             Carrots -- sliced
  1      c             Squash -- chopped
  1      c             Zucchini -- chopped
  1      c             Bell peppers -- chopped
  2      c             Mushrooms -- sliced
    1/2  c             Tomatoes -- chopped
  2      ts            Chili powder
  1      ts            Cumin
    1/4  ts            Black pepper
    1/8  ts            Cayenne
  8      oz            No-salt-added tomato sauce
  1      ts            Honey

In a large saucepan, cook onion and garlic, in oil until tender. Add
water, kidney beans, celery, carrots, squash, zucchini, pepper,
mushrooms, tomatoes, tomato sauce, and honey until soft. Mix in chili
powder, cumin, black pepper, and cayenne until blended. Simmer all
ingredients about 1 to 2 hours or until bubbly.
