MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Chicken Butternut Chilli
Categories: Poultry, Vegetables, Chilies, Squash, Herbs
     Yield: 4 servings

     1 tb Oil
     2 md Carrots; chopped
     2    Celery ribs; chopped
     1 md Onion; chopped
     2 c  Butternut squash;
          - peeled, diced
     1 md Tomato; chopped
     2 tb Tomato paste
 1 1/2 oz Env chilli seasoning mix
     2 c  Chicken stock
     1 c  Chicken breast;
          - cooked, diced
          Fresh cilantro; chopped

 In a large saucepan, heat oil over medium heat; saute
 carrots, celery and onion until tender, 6-8 minutes.

 Stir in squash, tomato, tomato paste, seasoning mix and
 stock; bring to a boil. Reduce heat; simmer, covered,
 until squash is tender, 20-25 minutes. Stir in chicken;
 heat through. Sprinkle with cilantro.
