MMMMM----- Recipe via Meal-Master (tm) v8.06

     Title: Arkansas Mule Skinner Chili

     Yield: 6 Servings

     2 lb Venison (elk, deer or
          - moose)
     2 lg Onions, chopped
     1    Head garlic, sliced
     3 tb Chili powder
     1 tb Cumin seed, crushed
     1 ts Coriander seed, crushed
     1 ts Paprika
     1 ts Oregano
     1    Chipotle pepper, chopped
     2 c  Celery, chopped
    15 oz Can crushed tomatoes
     1 ts Salt
     1 ts Black pepper
     2 tb Honey
    12 oz Bottle dark beer or ale
     1 cn Black beans, drained
     1 cn Hominy, drained

 Spray large kettle with vegetable spray. Brown meat. Add onions and
 garlic. Cook until soft. Add spices and chipotle pepper. When bubbly,
 mix in celery, crushed tomatoes, salt, pepper, honey and beer. Cover
 with lid, hang over campfire and simmer slowly about 1 hour. Remove
 lid and add black beans and hominy. Cook another 30 minutes. Serve
 up in bowls. Add grated sharp Cheddar cheese if desired.
