     Title: Green Peppercorn Sauce

    25 g  Butter
     1    Shallot
     1 tb Flour
     2 tb Green peppercorns; + liquid
    50 ml Cognac
   300 ml Beef stock
    50 ml Cream
          Salt; to taste

 Cooking time: 15 minutes

 Homemade green peppercorn sauce? This delicious green peppercorn
 sauce is easy to make, has few ingredients, and is full of flavour.
 Green peppercorn sauce is a classic, and delicious.

 You will need the following cooking equipment: chopping board, chef's
 knife, small saucepan, whisk

 Peel and finely chop the shallot. If you like, you can crush the green
 peppercorns a little, but this is unnecessary.

 Heat the butter in a small saucepan and fry the shallot and the
 peppercorns. After a few minutes, add the flour and cook briefly.

 Add the cognac and, shortly afterwards, the stock. Stir until smooth
 with a whisk. Add 2 tb of the green peppercorn liquid.

 Stir in the cream and season with salt. Allow to thicken into a nice,
 creamy sauce. Enjoy!
